Lager is the most popular type of beer in the world. It’s usually lighter in colour, but you can also find dark brown and black lagers. The smooth, crisp and clean taste of a lager beer comes from being fermented and conditioned at low temperatures – which is why it’s also best drunk when it’s chilled!
Unlike ales, lager is made using a cold fermentation process called ‘lagering’. Brewers use a bottom-fermenting yeast that settles at the bottom of the beer during fermentation. This yeast works better in cooler temperatures, and this process is what gives the beer its unique taste.
Lager was first brewed in the 15th century in the Bavarian region of Germany. Brewers there allowed their bottom-fermented beer to mature in the cool temperatures of some local caves, which gave the lagerbier its distinct features.
Fun fact: the word lager comes from the German word ‘lagern’ which means ‘to store’.
All lagers are beers, but not all beers are lagers. The key difference is in how they’re made. Lagers go through a cooling fermentation process, giving them a crisp and smooth edge. Other beers, such as pale ales, ferment at warmer temperatures and have a wider variety of flavours.
